Italian Pasta Salad


 One night for dinner I threw this together.  My kids loved it.  It's now a frequent visitor to the dinner table.  There are many things I like about this dish.  #1 I can make it earlier in the afternoon on a busy day so it's ready when we need it.  #2 My kids love it - even my picky eater who doesn't like anything mixed.  #3 Taste - it's very yummy!  #4 It's very quick to make!


1 pkg. noodles (any shape)
1 pkg. mini pepperoni
small tomatoes
cucumber, 2
bell peppers, 2
feta cheese
Creamy Ceasar dressing
black olives (optional)

Boil a pot of water.  Cook noodles according to package directions.  While that's cooking, dice all of your veggies.  If you're using cherry tomatoes, cut in half.  I like my salad heavy on the veggies, add to your tastes.



When the pasta is cooked, drain and return to the pot.  Let cool for a minute or so.  Then you can add your pepperoni, chopped veggies, and about 3/4 cup of the creamy Caesar dressing (I like Newmann's Own because it's all natural.)  When it's cooled down a bit, you can add the feta (crumbled).  Refrigerate for an hour or so - or until dinner time.

  2. Yum...I am eager to try it. I didn't realize there was mini pepporoni available. Great idea for a yummy salad. Thanks for sharing.
